Slow pressing. Static settling at 6–8°C after 48 hours of must settling. Controlled fermentation at 16–18°C.

Livestock farming

The two grape varieties are fermented separately in tanks. After blending, the wine is aged for 3 months in tanks.

About the wine:

Light gold color. Nose of ripe white fruit against a spicy, anise-like backdrop. Quite bitter on the palate, with a warm overall profile; the fruit has yet to fully express itself. An ibis that has not yet taken flight. Best enjoyed with fennel-seasoned sea bass.
