Short cold pre-fermentation maceration, fermentation with indigenous yeasts. Co-fermentation of whole Syrah and Carignan berries. Extraction achieved solely through gentle pumping over. Devatting at the end of alcoholic fermentation. Blending of free-run and press wines to complete sugar fermentation. Racking and blending at the end of malolactic fermentation.

About the estate:

Gaëlle and Florian met in Burgundy and decided to settle in the Languedoc in the early 2010s. After a few years of searching, the Franco-German couple settled in Fontjoncouse, where they cultivate plots of old vines. The wine is carefully aged in barrels. A promising new force in this wild and stony part of the Corbières. This is a winery with a bright future!
