100% hand-harvested and destemmed; part of the harvest is vinified using the “Bordeaux” method with pumping over, and the other part using the “Burgundy” method with punch-downs. Maceration duration determined by daily tastings (minimum 14 days). Wines are racked at the end of alcoholic fermentation and then transferred to tanks or 225-liter barrels for malolactic fermentation. The first pressings are added to the free-run wine.

9 months: 60% in barrels (40% new barrels, 15% one-use barrels, 15% two-use barrels) and 40% in stainless steel tanks to bring out the fruitiness

About the estate:

Laurent Delaunay has established his winemaking facilities in Marseillette, a small wine-growing village not far from Carcassonne, and the winemaker Vincent Charleux oversees them. These two enthusiasts of the Languedoc terroirs pool their talents to carefully select the vineyards, winemaking methods, blends, and aging processes. Laurent Delaunay, along with his wife Catherine—an oenologist like him—had already created Les-Jamelles in 1991, a range of wines made from remarkable grape varieties. In late 2015, they purchased the La Métairie d’Alon estate in Limoux with the goal of producing exceptional Pinot Noirs and Chardonnays on the beautiful high-altitude terroir of Magrie. The estate comprises 25 hectares cultivated organically and biodynamically, divided into 25 plots, allowing for plot-specific selections and meticulously crafted cuvées. By the third vintage, their success was already evident. The sunny Pinot Noir cuvée, produced on a north-facing clay plot, is breathtaking. This estate richly deserves a second star!

Cumulo Nimbus! What a strange name, evoking those storms so unwelcome in the vineyard... A name had to be found for each cuvée in the Nuages et vents range. A name that turned out to be well-chosen, since this Cumulo Nimbus, brilliant as lightning, dazzled the grand jury, which awarded it a Favorite. The intensity of the color, the depth and richness of the nose, which delivers successive bursts of powerful aromas of vanilla, tapenade, and licorice. Robust on the palate, full-bodied, harmonious, and long-lasting, with spicy notes of clove, whose richness is balanced by fresh hints of peppermint and garrigue herbs: a rare harmony.

About the estate:

Born into a family of Burgundian winegrowers and merchants, Laurent Delaunay, an oenologist, after founding Badet Clément & Cie, acquired in 2005 the business founded in 1996 by Australian oenologist Nerida Abbott, creating under the name Abbotts & Delaunay a wine merchant and producer specializing in wines from the Languedoc-Roussillon region. In 2015, Laurent Delaunay purchased the Métairie d'Alon estate and its 25 hectares of organically farmed vineyards from Jean-Louis Denois, a well-known winemaker from Limoux.
