Le Clos du Serres
The 15-hectare Clos du Serres estate has been managed since 2006 by Béatrice and Sébastien Fillon, who are based in St. Jean de Blaquière. In 2011, their brother-in-law, Nicolas Molard, joined them. Located 50 km northwest of Montpellier, the Clos du Serres vineyard is farmed organically, and yields are limited to an average of 30 hl/hectare.
“Serres” means “surrounded by hills” in Occitan. Indeed, the estate’s vineyards are situated in the heart of a preserved and wild natural environment: Lake Salagou, the Hérault Gorges, the Mourèze Cirque, Saint-Guilhem-le-Désert, and the Larzac Plateau… The Clos du Serres vineyard enjoys a climate that is both Mediterranean and mountainous, with the sea to the south and the Larzac Plateau to the north, where Mont Baudille rises to an altitude of 849 meters.
Meticulous work is carried out to ensure the utmost authenticity in each cuvée, including hand-harvesting, rigorous sorting, and plot-by-plot winemaking to allow each terroir to express itself fully through the wines produced.
The Clos du Serres wine portfolio focuses primarily on reds and specific vineyard sites within the Terrasse du Larzac appellation, which has held AOC status since 2014: Saint-Jean, Les Maros, Sainte-Pauline, Le Palas, and L’Humeur Vagabonde (made from century-old Carignan vines). An “Entre Amis” rosé and a “Le Saut du Poisson” white, both designated AOP Languedoc, round out the offerings from this up-and-coming estate, along with a “Plan B” red, made without added sulfites.
