Produced in a limited quantity of only 3,000 bottles, Compostelle blanc comes from plots where the grapes ripen slowly but optimally, on highly filtering Villefranchian pebble soils. It is also aged for several months in Sauternes barrels, particularly those from Château d'Yquem. It opens with aromas of sweet spices (bourbon vanilla) and displays roundness, freshness, and beautiful aromatic complexity combining citrus fruits and white flowers. About the estate:
Luc Baudet had the audacity to settle in this region, which is still heavily influenced by the cooperative. Attached to the Costières de Nîmes, he set up shop at Mas Neuf. The richness of the terroirs allows him to offer three types of cuvée: Rhône Paradox, with its freshness and purity of fruit; Compostelle, the result of sorting old vines and grapes from the best plots. And finally Armonio, born from an encounter with Louis Mitjavile (Tertre Roteboeuf, in Saint-Emilion, notably)."
