Take your time; you can let it age in the cellar for a few years, or for those in a hurry, don’t rush it: Khayyâm is a poet—he needs a little time to unfold (decanting it 1 to 2 hours before the meal is an excellent way to do this). Let time flow slowly, like wine; life is sweet.

This is the oriental variety—the spiciest and warmest of them all—so we highly recommend serving it at your table this winter; it’s sure to warm things up.

About the estate:

The estate’s success highlights the potential of this region in southern Ardèche, which has long been underappreciated but is now gaining recognition for its quality. On the rounded pebble soils at the confluence of the Rhône and Ardèche rivers, the biodynamically farmed vineyards of Mas de Libian produce wines that surprise with their pure fruit, sincerity, and concentration, while retaining their freshness.

What a disappointment. It’s a sparkling wine. Undrinkable. It’ll end up down the drain. There were five of us at our tasting party, and this is the unanimous opinion. How can anyone produce a wine like this and still have such a reputation? Unheard of.
