Take your time, you can let it age in the cellar for a few years, or for those in a hurry, don't rush it: Khayyâm is a poet, it needs a little time to unfold (using a decanter 1 to 2 hours before the meal is an excellent way to do this). Let time flow slowly like wine, life is sweet.

This is the most oriental, the spiciest, the warmest, so it is highly recommended to invite it to your table in winter—it will warm it up.

About the estate:
The estate's success demonstrates the potential of this sector in southern Ardèche, which has long been overlooked but is now gaining in reputation and quality. On the rounded pebble terroirs at the confluence of the Rhône and Ardèche rivers, the biodynamically cultivated vines of Mas de Libian produce wines that surprise with their purity of fruit, sincerity, and concentration, while remaining fresh.

What a disappointment. It's a sparkling wine. Undrinkable. It'll end up down the sink. There were five of us at our tasting party and we all agree. How can you produce a wine like this and have such a good reputation? Unheard of.
