Viticulture

Traditional soil cultivation. No herbicides used. Pesticide use is kept to a minimum and has been organic since 2011. Certified organic fertilizers.

Winemaking

The grapes are crushed and destemmed. Grenache and Syrah are fermented separately using native yeasts. Fermentation takes place at low temperatures, with 2 to 4 rackings at the very start of fermentation, minimal pumping over, and post-fermentation maceration at warm temperatures. The wine remains in vats for approximately 30 days. Aging on fine lees, partly in wooden vats and partly in concrete vats.

12 to 18 months, 50% in wooden truncated cone tanks and 50% in concrete tanks.

Palate

Fresh and fruity, with notes of cherry and strawberry. Well-structured with fine, silky tannins. A lovely, lingering finish that highlights its freshness and finesse.
