Château de Jau - Côtes du Roussillon blanc 2025

Located at the border between the black schist soils of Maury and the clay-limestone soils of Tautavel, the estate makes the most of the diversity of these terroirs as well as that of the grape varieties grown here: Rolle, Grenache, and Macabeu. In the glass, this is a flavorful wine, opening with notes of white flowers and amyl notes—the result of aging on fine lees in stainless steel tanks. This aging process lends roundness to a lively, airy palate, where you can savor the taste of fresh peach. Best enjoyed while it’s still young and fruity.

All that remains of the building constructed in the 12th century by Cistercian monks is the magnificent tower nestled against the rock face. Jean and Bernard Dauré purchased the estate in 1974. The mid-19th-century silkworm farm now houses the Contemporary Art Space, which is located next to one of the first winemaker-run restaurants established in France, open during the summer. The vineyard covers 90 hectares.
