By hand, through successive sorting and the search for a slight overripeness.

Winemaking

Direct pneumatic pressing, severe settling and alcoholic fermentation in thermo-regulated stainless steel tanks at a low temperature of around 15°. Use of staves (oak planks) for length and vanilla notes on the finish.

Mouth

Full-bodied and fleshy, with hints of peach and apricot and a vanilla finish.

In 2000, Charles-Henri Gayet, wine merchant and head of Adrien Vacher, took over this estate, founded in 1953 at the foot of Mont Granier, which has grown from 7 to 30 hectares and whose wines are regularly listed in the Guide, both white and red.
