This trio of red grape varieties, carefully vinified by Maxime Dancoine and Guillaume Lavie, offers us a truly delightful wine. The nose reveals a powerful, wild character, with notes of white pepper, ripe fruit, and clove. On the palate, it displays a lovely youthful vibrancy along with ripe yet pronounced tannins, offering a pleasant mouthfeel that is both round and fruity. Definitely a wine to enjoy!

Wine Production

Each grape variety is vinified separately. The “mille-feuille” method is used, with both destemmed and undestemmed bunches for the Gamay and Pinot varieties; the Mondeuse is not destemmed. A starter culture from these same vines is added to the pomace to initiate alcoholic fermentation. Alcoholic fermentation temperatures range from 20 to 27°C. Maceration times vary depending on the grape variety, ripeness, and health of the grapes, ranging from 12 to 15 days. Pressing is done without re-pressing, and alcoholic fermentation is completed. Blending takes place after a week of rest. Malolactic fermentation (MLF) then begins spontaneously. The first racking comes exclusively from the tank , while for the spring and summer rackings, approximately one-third of the blend is aged in barrels.
