Winemaking

One-day settling at 4°C; spontaneous alcoholic fermentation begins when the must reaches approximately 15°C. A constant temperature below 19°C is maintained throughout alcoholic fermentation; spontaneous malolactic fermentation begins simultaneously with alcoholic fermentation; sulfiting is performed only at the end of fermentation at a rate of 1 g/hl.
