About the wine:
Talent knows no age. Benjamin Passot founded his winery in 2017. A native of Burgundy, he was deeply influenced by his past experiences in the region’s vineyards. The grapes from his 80-year-old vines—currently in the process of transitioning to organic farming—are fully destemmed, fermented with native yeasts, and then aged for ten months in barrels. The Burgundian DNA is evident in this cuvée, which possesses an ethereal elegance. Notes of cooked cherries set the stage for a juicy palate, displaying admirable finesse supported by a subtle, delicate acidity. An easy-drinking and dynamic wine, thoroughly delightful. About the wine:
11.5% alcohol. Blue granite soils. Semi-carbonic maceration, wild yeasts. Supple, fresh, lively, and stony, with a mineral touch and concentrated notes of cherry and raspberry. It’s lively and vibrant, with a lean mouthfeel and a fresh, subtly spicy finish. A taut style.
