About the wine:

Talent knows no age. Benjamin Passot founded his winery as recently as 2017. A native of Burgundy, he has been shaped by his past experiences in the region’s vineyards. The grapes from his 80-year-old vines, currently in the process of transitioning to organic farming, are fully destemmed, fermented with native yeasts, and then aged for ten months in barrels. The Burgundian DNA is evident in this cuvée of ethereal elegance. Notes of cooked cherries are a prelude to a juicy palate, displaying admirable finesse supported by a subtle, discreet acidity. A light, dynamic wine that is thoroughly delightful. (September 2023, No. 88)

About the wine:

11.5% ABV. Blue granite soils. Semi-carbonic maceration, wild yeasts. Supple, fresh, lively, and stony, with a mineral touch and concentrated notes of cherry and raspberry. It’s lively and vibrant, with a lean mouthfeel and a fresh, subtly spicy finish. A taut style.
