Fermented for approximately 25 days at 16-18°C, no yeast added, full malolactic fermentation.

Breeding

12 to 16 months on lees in stainless steel tanks and 20% in 400L oak barrels

Bright, limpid, pale golden yellow colour

Nose

Pure and delicate, exuding scents of fresh citrus, iodine and acacia flower bouquet.

Mouth

Velvety, full-bodied and richly aromatic, dominated by fine, terroir-chiselled minerality, to which is added citrus zest with subtly toasted flavours, long, elegant and deliciously iodized finish.

About the domain :

We've been following this domaine for some time now, and are delighted with the seriousness and steady progress of Charly Nicolle. Exploiting the terroirs of Fleys, including the two premiers crus Les Fourneaux and the easternmost part of Mont de Milieu, he extracts a short range with great density on the palate, bringing out the minerality of each cru. A sure bet for the sector.

About the domain :

Charly Nicolle's great-grandparents already cultivated vines. Following in the footsteps of previous generations, the young winemaker set off on his own adventure. Settled in Fleys, to the east of Chablis, he created his own domaine in 2011, nurturing his 17 ha of Chardonnay, and has established himself as an established name in Chablis. He also runs the family domaine of La Mandelière.
