Nicolas Fèvre - Saint-Romain blanc 2023
2*Coup de Coeur
Hachette
"This Saint-Romain elevates Chardonnay to new heights in this surprising cuvée—a wonderful discovery!"
Expressive and complex, this white Saint-Romain from Domaine Nicolas Fèvre opens with enveloping aromas of vanilla pod, acacia blossom, and lemon zest, complemented by a refreshing hint of minerality. Full-bodied and velvety on the palate, this cuvée reveals itself to be light and refined, with flavors of citrus zest, stone fruit, and vanilla brioche in a long, full-bodied, and supple finish. It pairs perfectly with pan-fried scallops or a beautiful sole meunière. Magnificent.

About wine:
Please note that there will not be enough of this very limited vintage to go around. This is unfortunate, as it is remarkably harmonious in every way. We love its elegant golden color with straw highlights, its complex nose with subtle hints of vanilla, flowers, minerals, and lemon, and its full, fresh, dynamic palate with tension, but also a touch of richness that rounds out the edges. Serve with a nice fish, such as monkfish with saffron.
About the estate:
Although Nicolas Fèvre's main activity is consulting in oenology, he created his own small estate in 2014 by taking over part of the family vineyards, which had previously been farmed on a sharecropping basis, in Saint-Romain, Auxey-Duresses, and Bourgogne-Aligoté.
