About the estate:
Both agricultural engineers and oenologists, Sophie and Matthieu Woillez have been based in the town of Tharoiseau since 2009. Their 13-hectare vineyard, planted mainly with Chardonnay, covers a hillside facing Vézelay. They are in the process of converting to organic farming.

Very good, slightly lemony with buttery and hazelnut notes. Very pleasant, lively, with a touch of richness on the mid-palate that strangely reminds me of certain brut champagnes from the Côte des Blancs (with a dosage of 10 g/L). Although, come to think of it, it’s not so strange after all—it’s the same grape variety. Note: Serve at a temperature of 11–12°C. If served below 10°C, most white wines will leave you with nothing but a sensation of acidity and cause you to miss out on the essence of the wine.
