Bettane & Desseauve
Domaine rated 2*Stars (A serious and recommendable production, but a little more regular and homogeneous than the previous one)
About the domain :
This brand from the Cave Coopérative de la Côte des Bar (which nicely describes itself as a "winegrowers' house"), in the Aube region, has made great strides and effectively demonstrates the undoubted potential of this "southern" terroir of Champagne winegrowing. With the exception of the cuvée première, which remains below the rest of the range, the champagnes have a definite personality, as demonstrated by the astonishing pinot blanc.
Guide Hachette des vins
Domaine noté (guide 2025) Award-winning wines (The wines of this producer are regularly awarded by the guide)
About the domain :
Founded in 1956, this Aube-based cooperative now has 130 members cultivating 315 ha in ten villages in the Arce valley, near Bar-sur-Seine. Pinot noir is the king grape variety of the Côte des Bar region, accounting for the majority of local vines.

About the domain :
Founded in 1956, the cooperative now includes no fewer than 130 winegrowers and 315 ha of vines. Overlooking the Arce valley, in the heart of the Côte des Bar region, this "winegrowers' house" is housed in a large, characterful 19th-century building. On a terroir where Pinot Noir is king, the landscape, with its alternating vineyards and forests, favors biodiversity and allows for an environmentally-friendly approach. The range has been enriched by the addition of two new certified organic cuvées ("Les Authentiques"), and a new tasting area in the company's cellars, as well as a scenography called "Les Effervescentes", have been created. Of particular note is a vintage Pinot Blanc cuvée, a house specialty.

A great classic: brioche and lemon cream [...] A refreshing lemon sorbet in the middle, becoming increasingly generous towards the end.
