Cold maceration for 7 days at a low temperature (8–10°C), fermentation with punch-downs for 10–15 days, and pumping over in French oak casks (5 metric tons) and temperature-controlled stainless steel tanks (5 metric tons) (at 19–23°C), followed by post-fermentation maceration (2–6 days), malolactic fermentation in French oak barrels
