Cold maceration for 7 days at low temperature (8-10°C), fermentation with punching down for 10-15 days and pumping over in French oak casks (5 tons) and temperature-controlled stainless steel vats (5 tons) (at 19-23°C), then post-fermentation maceration (2-6 days), malolactic fermentation in French oak barrels.
