In the local vernacular, “Ramnista” means “royal hill,” evoking the rolling hills characteristic of the Naoussa vineyards. The “Ramnista blocks” are the source of the Xinomavro grapes for this wine; each vintage is a selection of the best plots from this specific area, in this case, a selection of: #8, #12, #13, #14, #15, #16, #17, #18, and #20.

Cold maceration for 7 days at a low temperature (8–10°C), fermentation with punch-downs for 10–15 days, and pumping over in French oak casks (5 tons) and temperature-controlled stainless steel tanks (5 tons) (at 19–23°C), followed by post-fermentation maceration (2–6 days), malolactic fermentation in French oak barrels
