Full-bodied and very refined, yet intense, with velvety, silky tannins that are wonderfully integrated and intertwined with the fruit. Ripe mid-palate. Tight at the end, suggesting the need for serious bottle aging. Very structured. Drink after 2025." Wine making

After the first selection in the vineyards, a second selection takes place in the cellar before destemming, followed by gentle pressing, fermentation with natural indigenous yeasts in 225-liter open-top barrels for the smallest plots and in 50-hectoliter barrels or stainless steel vats for the larger plots, Six daily manual punch-downs and pump-overs, maceration for 7-10 days, malolactic fermentation in old barrels and 50hl barrels.

About wine:

Another great year, even if some 2019 wines—but not the Testamatta—lacked a little concentration. With a relatively light color, it sits at the other end of the density scale compared to wines from the early 2000s. The aromas of raspberry and redcurrant are tangy, and both the nose and palate show admirable delicacy and restraint. Very elegant and pure, its fine acidity gives it excellent length and good aging potential. 2023–2036

About wine:

A pure expression of Sangiovese, the 2019 Bibi Graetz Testamatta is a wine in constant evolution. Bibi has added 17 additional hectares of vineyards to the program, including 12 hectares in Fiesole (north of Florence) and 5 hectares in San Donato in Colle (south of Florence) with 70-year-old vines. The wine's structure comes from fruit grown on old vines planted in the 1950s in the cool climate sub-region of Chianti Classico di Lamole. These new terroirs bring much more aromatic nuance and complexity to the wine, with scents of blue flowers, candied orange peel, damp earth, and black plum fruits. The white Alberese soils add a strong chalky mineral signature to the finish of this elegant and linear Tuscan red.
