After the first selection in the vineyards, a second selection takes place in the winery before destemming, followed by plot-by-plot pressing in open-top barrels, fermentation with natural indigenous yeasts for up to two weeks, six to eight daily manual punch-downs and pump-overs, maceration on the skins for an additional week, and malolactic fermentation in old barrels.

For 18 months before final blending: only the best barrels are used for Colore.

Intense and energetic scents, floral notes of violets and lemongrass leaves, complemented by fruity notes of cherries, raspberries, and juicy plums.

Elegant and complex, firm tannins, fine-grained, impeccable structure with wonderful vibrancy, concentrated and long finish, with flavors of fresh flowers, mint, black cherry, and blackcurrant.

About wine:

Another excellent wine from Bibi Graetz, made from a selection of old Sangiovese vines. The nose is herbaceous and spicy, fragrant but with salty rather than floral or fruity aspects. Intense and direct, it hits you with full force, with energy and forward momentum. It is so elegant and well-defined, smooth but lively and energetic, with beautifully executed tannins. Almost sumptuous and chewy, it gives weight and texture on the palate while remaining quite light and airy overall. Complex and invigorating, fresh and wild at the same time—I love its character, it is pure but with a sense of authenticity that perfectly sums up the terroir and the winemaking philosophy. It finishes with notes of mint, licorice, spicy blackcurrant, and fresh cherry that are extremely appetizing! 2026-2045

Intense aromas of purple fruits such as raspberry, spices, graphite, and granite. There are also fragrant flowers. Full-bodied, tight with balanced tannins that show transparency and concentration. Crisp and very long. Best after 2028 when it will open up and integrate beautifully.
