"A magnificent wine with great aromatic complexity and a beautiful balance"

Aged under a veil for 6 years and 3 months, the Château-Chalon from Domaine Badoz offers an intense nose with notes of walnut, green apple, and spices. Smooth and velvety on the palate, it is also full-bodied and harmonious.

It pairs perfectly with American-style lobster, cream-based poultry dishes, morel mushrooms, haddock, curry dishes, and especially Comté cheese... some even recommend it with dark chocolate...

About the estate:

He represents the tenth generation of the Badoz family in Poligny. After studying at the Beaune wine school, he returned to the estate in 2003 and inaugurated the winemaking facility in 2004. It took him some time to make the switch to organic farming, but he obtained certification in 2019. The estate’s vineyards are located in the Roussots and Grands Roussots lieux-dits. Half of the estate is planted with Savagnin, though that doesn’t mean the reds should be overlooked. He takes barrel aging a bit further on certain cuvées.
