Slow pressing. Static settling at 6–8°C after 48 hours of must stabilization. Controlled fermentation at 16–18°C.

Livestock Farming

The two grape varieties are fermented separately in tanks. After blending, the wine is aged for 3 months in tanks.

About the wine:

Light gold color. Aromas of ripe white fruit against a spicy, anise-like backdrop. Quite bitter on the palate, with a warm overall profile; the fruit has yet to fully express itself. An ibis that has not yet taken flight. Best enjoyed with fennel-seasoned sea bass.

This white wine is very different from what I'm used to. It has a dry and unusual aroma. I'm just getting used to French wines, since I've been in the Southern Hemisphere for a number of years.
