Domaine de Cazaban
Created in 2007 , the Cazaban estate is located near Carcassonne, on the southern slope of the Montagne Noire. In the heart of the Cabardès appellation, a unique appellation in Languedoc, Cazaban has been Ecocert certified organic since 2010 and Demeter biodynamic since 2013.
In 2017, it was taken over by Emmanuel Taillez and Joseph Parcé (Domaine de la Préceptorie), and is now run solely by Emmanuel Taillez.
The Cazaban estate covers 22 hectares of vines across three different terroirs: the Plaine de Cazaban, with its arigo-limestone soil; the foothills of the Montagne Noire, with its calco-schist and schist soil; and the west of the Minervois, with its clay-limestone soil. The somewhat unusual Cabardès appellation is located in the west of Languedoc, benefiting from both oceanic and Mediterranean influences, where the traditional Languedoc grape varieties Grenache, Carignan, Syrah, and Mourvèdre thrive, as well as Bordeaux varieties, mainly Merlot, Cabernet Franc, and Cabernet Sauvignon.
