About the wine:
In homage to his grandfather, a schoolteacher (nicknamed the “black hussars” by Charles Péguy), Jacques Bilhac has crafted a great Pézenas, one that is very... Pézenas, with a distinctive, smoky nose of black fruits, pepper, and Zan. Refined through extended aging (in barrel, tank, and bottle), the palate is smooth and offers a beautiful texture, gently resting on soft, licorice-tinged tannins. Very caressing, smooth, powerful, but above all elegant—this wine borders on perfection.
About the estate:
Coming from a long line of winemakers, Jacques Bilhac—joined in 2003 by his brother Alex—manages 30 hectares of vineyards, most of whose grapes he supplies to the cooperative winery. In 2014, the brothers built their own winery and withdrew 7 hectares from the cooperative to produce their own wines.
