About the wine:

About the estate:

Coming from a long line of winemakers, Jacques Bilhac—joined in 2003 by his brother Alex—oversees 30 hectares of vineyards, most of whose grapes he supplies to the cooperative winery. In 2014, the brothers built their own winery and withdrew 7 hectares from the cooperative to produce their own wines.

A wine that expresses its terroir with disconcerting ease. Grounded in a foundation of astonishing freshness, its complexity and pronounced aromatic intensity unfold elegantly within a full-bodied, rich, and smooth texture, polished by refined, caressing tannins. The finish is accompanied by a lingering, gentle peppery warmth. A very Mediterranean pairing with sautéed wild boar marinated in porcini mushrooms and sautéed potatoes with herbs. Rating = 4.1.
