About the estate:

This unique estate, located in the picturesque setting of the Causse de Siran, is run by Cécile Boyer-Domergue, who is always assisted by her mother, Patricia. Their wines are the result of work carried out with exemplary integrity, focused on the cultivation of rare or forgotten grape varieties. The fruit on the nose always has a slightly candied character, while on the palate the wines display rare elegance and great finesse of texture, particularly the pure Cinsaults. The top vintages are sold only when they reach their peak. The estate produces a lovely dry white made from forgotten varieties—Araignan Blanc, Riveyrenc Blanc, and Riveyrenc Gris—as well as a passeri-style wine, Erme, in the spirit of the “noble wines” once produced in the Minervois. We must commend the uniqueness and strength of this approach—both winemaking and heritage-focused—which serves as a key point of reference, not only for the Minervois but for the entire Languedoc region.

Far from the typical full-bodied, robust Minervois, this 100% Carignan “Carignanissime” is nonetheless a pleasant wine for sharing with friends, thanks to its easy-drinking, airy character, with a fleshy texture underpinned by a concentration of sparkling black fruits and musky notes. The finish is short, fresh, spicy, and slightly cocoa-like. Simple and easy to drink, it was served at 16° alongside a casserole of farm-raised pork trotters in a chorizo sauce with a pinch of Espelette pepper. Rating = 2.8 because there is a plethora of wines of this type (and even better ones) available at lower prices from many producers in northern Aude (Domaine Cavailles, Château du Donjon, Château Mignan, Domaine du Château Sainte-Léocadie, etc.).
