Domaine de Courbissac
Located in Cesseras, northeast of Carcassonne in the Languedoc region, the Courbissac estate has been run by Brunnehilde Claux since 2013. This passionate young winemaker, a rising star in Languedoc, first proved herself at the famous Gauby estate and in Priorat, Spain, where she developed various winemaking methods. Drawing on her experience, she juggles traditional fermentation with destemming and whole bunch fermentation to preserve fruit and freshness. She produces personal and dynamic wines that contribute to the growing success of the Courbissac estate and the Minervois appellation.
The 17-hectare Courbissac vineyard is backed by the Montagne Noire and planted on south-facing slopes at an altitude ranging from 50 to 500 meters. The clay-limestone soils are varied: pebbles, schist, sandstone. The oldest vines on the estate are 90 years old, some of which are grafts of French vines, which is very rare. The grape varieties correspond to the traditionalAOC Minervois varieties, with a few exceptions: Grenache, Syrah, Mourvèdre, Carignan, Terret, Marsanne, Grenache Gris, and Muscat. The originality of the range lies in the white wine known as "orange wine" due to its pronounced orange hue and marked tannic structure resulting from vinification with maceration similar to that used for red wine. The red wines are intense, precise and always fruity and fresh, a fine example of Languedoc wines.
