The Grenache grapes are destemmed at full ripeness and undergo a 30-day maceration. The Syrah grapes undergo a 4-day cold pre-fermentation maceration followed by a 40-day maceration. The old-vine Carignan undergoes a 30-day carbonic maceration.

Aged for 12 months in new and one-use oak barrels. No fining, with light filtration.

About the wine:

An enchanting red wine blending Syrah, Carignan, and Grenache, which underwent an exceptionally long maceration in the cellar (fifty days). The nose, which takes time to open up, initially bears the mark of the barrel with its roasted and smoky notes, then gives way to aromas of black fruit, garrigue, and undergrowth. The palate impresses with its fullness and concentration, perfectly balanced by well-integrated tannins that are powerful yet remarkably refined. A long finish of black fruit and spices speaks volumes about the potential of this beautiful red. For fans of Stephan Eicher, it’s worth noting that the singer designed the label.

About the estate:

All that remains of the medieval fortress of the Lords of Oupia are sections of wall—remnants of the outer walls—and a tower. In 1860, Romain Iché purchased the château, which passed to his grandson André in 1970. André undertook the renovation of the estate and the cellar, transforming the property into a benchmark for the Minervois appellation. He passed away in 2007, leaving his life’s work to his daughter Marie-Pierre.

5V for this remarkable Minervois after opening a second bottle, thanks to its quality and its very, very, very reasonable price. Robust structure, with elegantly integrated tannins on top of jammy black fruits and ripe notes, with a hint of balsamic vinegar. Full-bodied and dense. A soft, spicy finish with notes of vanilla and caramel. A treat for the taste buds when paired with a slice of pan-seared veal liver.
