Winemaking

The grapes are harvested when slightly overripe, destemmed, and then put into fermentation. Gentle, high-quality extraction takes place during daily pump-overs at a controlled temperature. Daily tastings help determine when to end post-fermentation maceration.

Livestock farming

Aged in new French oak barrels for 12 months for 10% of the blend

The nose offers aromas of garrigue and spices, with subtle woody notes.

The alcohol is too overpowering, with aromas of candied fruit; it feels like drinking a Gigondas or another Southern Rhône wine. It seems better the next day, but the first impression is a bit disappointing.
