The three grape varieties are harvested separately based on their ripeness and tasting notes.

Winemaking

Fermentation begins after a brief maceration of each grape variety, followed by 15 days of vatting with daily punching down or pumping over. Fermentation takes place at a controlled temperature between 26° and 30°. The final blend is determined after tasting.

About the wine:

Tasted as a barrel sample, the 2015 Cuvée Spéciale Minervois represents a further step forward compared to the 2014 vintage (which is by no means lacking in quality) and offers deeper, richer notes of black raspberries, blackcurrants, crushed flowers, and violets. Medium-bodied to full-bodied, pure, concentrated, and elegant, it certainly has exceptional potential and should become a fine wine and a real bargain.
