About the estate:

Mas Conscience has changed hands and is now led by Audrey Bonnet-Koenig, who previously oversaw technical operations at Château de Sérame and managed La Peira after working at Dubourdieu. She is assisted by the renowned oenologist Claude Gros. Let’s hope this new team continues the quality-driven revitalization of this beautiful estate that Nathalie and Éric Ajorque began.

About the estate:

Founded by Éric and Nathalie Ajorque, this 15-hectare organic vineyard, located at the foot of the Séranne mountain range, was purchased in 2000 by Roman Kocholl, who fulfilled his dream after a long career in the digital industry in Hamburg. At the helm is Audrey Bonnet, an agricultural engineer and former director of the Peira winery, supported by Claude Gros, a renowned consulting oenologist.

The bouquet of this TDL surprises with the intensity of its tangy red and black fruit aromas, complemented by spicy and licorice notes. The palate, in perfect harmony, is full-bodied and rich, with hints of graphite, a refined structure, and firm, slightly austere tannins, creating a rather balanced whole without any heaviness. The finish is persistent, robust, and firm as well. Let it breathe a little. Good value for money. This youthful TDL awakened our taste buds with a sauté of Lozère lamb with black olives and rosemary, spiced up with a pinch of Espelette pepper. Score = 3.9.
