About the estate:

Mas Conscience has changed hands and is now run by Audrey Bonnet-Koenig, who was in charge of technical operations at Château de Sérame and managed La Peira after working at Dubourdieu. She is assisted by renowned oenologist Claude Gros. We wish this new team every success in continuing the qualitative renewal of this beautiful estate that Nathalie and Éric Ajorque had initiated.

The clean, delicious finish, without a hint of bitterness, is the final convincing touch.

About the estate:

Created by Éric and Nathalie Ajorque, this 15-hectare organic estate, located at the foot of the Séranne massif, was bought in 2000 by Roman Kocholl, who fulfilled his dream after a long career in digital technology in Hamburg. At its helm is Audrey Bonnet, an agricultural engineer and former director of the Peira winery, supported by Claude Gros, a renowned consultant oenologist.

The bouquet of this TDL surprises with its intense aromas of tart red and black fruits, complemented by spicy and licorice notes. The palate is in unison, full-bodied and rich, with graphite accents, a fine structure, and straight, slightly severe tannins, resulting in a rather balanced whole without any heaviness of style. The finish is persistent, muscular and firm. Let it breathe a little. Good value for money. This youthful TDL awakened our taste buds with a sauté of Lozère lamb with black olives and rosemary, seasoned with a pinch of Espelette pepper. Rating = 3.9.
