A light, refined, and delicate sparkling wine made from black Gamay with white juice. This cuvée is sure to please everyone. Winemaking

Direct pressing, cold settling, no sulfites added. Alcoholic fermentation at a low temperature (approximately 16°C), halted by cooling to 5°C when approximately 45 grams of unfermented sugar per liter remain. The wines are bottled after light filtration, with no additives.

Livestock farming

Foam formation during a second fermentation in the bottle lasting approximately 3 months. Disgorgement under isobarometric pressure, filtration, and rebottling into the original bottle. Light sulfiting; no other additives are added to the wine.

About the estate:

Gilles Bonnefoy built his estate from the ground up starting in 1997: he planted the vineyards between 2001 and 2016 and established the winery in 2004. Today, the 10.5-hectare estate is farmed biodynamically and is situated on the outskirts of two volcanoes: La Madone and Le Pigeonnier.

About the estate:

Les Vins de la Madone offers one of the most exciting experiences in the Côtes du Forez, a low-key appellation situated between Saint-Étienne and Clermont-Ferrand, at the gateway to the Livradois-Forez Nature Park. Gilles Bonnefoy strives to capture the sparkling purity of the fruit, both in his Gamay reds and in his whites (IGP d'Urfé), a Roussanne and a blend of Sauvignon Blanc and Sauvignon Gris. This vibrancy, drawn from granite and volcanic soils, is achieved through biodynamic viticulture (certified in 2008), vinification that partially uses whole clusters, and aging exclusively in tanks. The star is firmly set.
