As with red wine production, alcoholic fermentation takes place with the skins in stainless steel tanks, with punching down for 10 days. The wine is racked off the lees before fermentation is complete to develop smooth tannins. Malolactic fermentation is carried out to round out the palate.

About the estate:

This is one of the most famous estates in Provence. It belongs to the Combard family, who manage this 85-hectare vineyard, 30 hectares of which are leased. The vines, located along the coast on schist soil, have been cultivated using organic methods since 1979. Steps are currently underway to transition the entire estate to biodynamic farming. We applaud this commitment, which is no small feat for an estate of this size. While the wines are among Provence’s most reliable offerings, the family also goes the extra mile in welcoming visitors and, during the sunny days of the season, offers a cultural program well worth the visit.

A strange wine. At first, it smells like gas—as if you’d opened it on the stove without turning it on—then it takes on the aroma of cooked asparagus. The finish is bitter and lacks acidity. Not at all pleasant.
