"The soul of the Commandery"

Made from a skilful blend of Cinsault, Grenache, Syrah, Mourvèdre, and Tibouren grapes, selected from the estate's old vines, this rosé is characterized by its balance and complexity. Refined and elegant, the nose reveals notes of white-fleshed fruits, citrus and white flowers. The palate is harmonious, silky, delicate and lively, ending with a lovely fresh finish enhanced by a hint of saltiness. Enjoy with grilled sea bass or a citrus langoustine salad.

Wine making

Gentle pneumatic pressing, careful separation of the juices, and traditional vinification in temperature-controlled stainless steel vats are just some of the processes that precede our blending of the best batches obtained each year.

Livestock farming

Once fermentation is complete, a gentle racking allows only the best lees to be retained, which are then carefully worked to enhance both the aromatic expression and the potential for these aromas to develop over time.

3-star rating (High-quality production, serving as a benchmark in its sector)

About the estate:

Founded in 1204 by the Knights Templar, Peyrassol is a magical place. Acquired in 1789 by the Rigord family, the wines have made a name for themselves and are regularly ranked among the best in Provence. Forced to sell in 2001, Philippe Austruy acquired these 1,000 hectares of forest and 100 hectares of vineyards. He renovated the buildings with passion and dedication, transforming the garden into an open-air museum. The wines gradually found their rhythm and the arrival of Stéphane Derenoncourt as a consultant, combined with the modernization of the winery, enabled the estate to reach new heights.
