About the estate:
For three generations, the Pasquiers estate has been producing Côtes-du-Rhône, Côtes-du-Rhône-Villages Plan-de-Dieu, and Gigondas wines. The Plan-de-Dieu terroir is dominated by red clay covered with rounded pebbles, while Gigondas is located close to the famous Dentelles de Montmirail. The vinification and aging processes favor gentle extraction and integrated oak. The range is well defined and each vintage offers a very good synthesis.

About the estate:
Jean-Claude and Philippe Lambert took over this 85-hectare vineyard in 1998 and began selling bottled wine four years later. The fourth generation arrived in 2013, and the vineyard was certified organic that same year.

Dark ruby color with a purple core. On the nose, sultry and sun-drenched dark and red fruit, blackberries, blackcurrants, cherries. Herbs and spices. On the palate, the same as on the nose, with notes of licorice, texture, soft, fine-grained tannins, chocolate, freshness, and length. In short, a wine that is well-balanced and excellent. A pleasure to have in your glass. Aging potential. Score: 16+/20

With a warm, almost hot and decidedly distinctive profile, this Sablet displays great volume and density, dominated by spices and black pepper in general, and cooked red fruits in particular, tinged with scents of garrigue. The whole is underpinned by robust tannins, still young but well-ripened and satiny. The abundance of spices reinforces the finish. Simple without being simplistic, this pleasant and affordable Sablet can be enjoyed after a little over a year of additional aging to allow it to fully develop. For those who are impatient, like me, it can be enjoyed today, after aeration, with a homemade dish of melt-in-the-mouth beef lasagna, sprinkled with Parmesan cheese. Rating = 3.8.
