About the estate:

For three generations, the Pasquiers estate has been producing Côtes-du-Rhône, Côtes-du-Rhône-Villages Plan-de-Dieu, and Gigondas wines. The Plan-de-Dieu terroir consists primarily of red clay covered with rounded pebbles, while Gigondas lies in close proximity to the famous Dentelles de Montmirail. The winemaking and aging processes prioritize gentle extraction and well-integrated oak. The range is well-defined, and each wine offers a very well-balanced profile.

About the estate:

Dark ruby color with a purple core. On the nose, sultry, sun-kissed dark and red fruit—blackberries, blackcurrants, cherries—along with herbs and spices. On the palate, it mirrors the nose: bay leaf and licorice, body, soft, fine-grained tannins, chocolate, freshness, and length. In short, a wine that is perfectly balanced. A pleasure to have in your glass. Aging potential. Score: 16+/20

With a warm, almost rich, and distinctly characterful profile, this Sablet displays great body and a definite density, dominated by spices and black pepper in general, and cooked red berries in particular, with hints of garrigue aromas. The whole is underpinned by robust tannins, still young but well-ripened and silky. The abundance of spices comes to the fore to round out the tasting experience. Simple without being simplistic, this approachable and affordable Sablet will be ready to enjoy after about a year of additional aging to allow it to fully meld. For the impatient among us—myself included—it was enjoyed today, after being allowed to breathe, with a homemade dish of melt-in-your-mouth beef lasagna, sprinkled with Parmesan. Rating = 3.8.
