Domaine Le Sang des Cailloux
The Domaine du Sang des Cailloux is located on the garrigue plateau, facing the Dentelles de Montmirail between Vacqueyras and Sarrians. Bathed in sunshine and buffeted by the mistral wind, the estate's 17 hectares are classified as Vacqueyras appellation. Domaine du Sang des Cailloux was created in 1975 when the two brothers Ricard and Serge Férigoule separated, and Serge became the proud owner in 1990. A new era then dawned on the estate.
Serge Férigoule works, expresses and refines his philosophy on his terroir. In 1991, Domaine du Sang des Cailloux opted for soil cultivation adapted to the seasons and plots rather than chemical weeding. This allows for good control of natural weed growth. In a similar vein, compost made from grape marc and cow manure has been substituted for synthetic fertilizers. Throughout the year, the vines are carefully tended: tying, debudding, and removing fallen grapes in cases where production is too high. In order to harvest the best fruit, only one bunch per support is left on the white grape varieties and on the Mourvèdres. The vines at Domaine du Sang des Cailloux are defoliated according to the plot and the weather. During the manual harvest, systematic and rigorous sorting is carried out in the vineyards. The construction of the new cellar in 2001 has made it possible to refine the work carried out in the vineyards throughout the year thanks to a series of vats of different sizes.
