This 2019 Pax is composed of 65% Grenache, for its aging potential and generosity, and 35% Syrah for its finesse and freshness. The tannins are silky and support a generous, smooth palate with notes of licorice, caramel, and prunes and a spicy finish. It will be perfect with a pepper-crusted pork tenderloin or pan-fried veal liver with raspberry vinegar.

Medium to deep ruby color. On the nose, ripe blackberry and cassis fruit, dark tones, herbs, roots, vegetal notes, and some acidity. On the palate, the same ripe dark fruit, beautifully ripe and juicy sweetness, excellent body, fine acidity, grip, spiciness and spices, good balance. The finish still has that sweet, ripe character. Very nice. And that lovely sweetness is thanks to the Grenache. Score: 16.5/20

Note and opinion by Mr. GILLES D. Published on 08/06/2023
Grenache and Syrah combine in an atypical, expressive Ventoux. The supple attack is lined with dense, melt-in-the-mouth flesh, while the caressing, enveloping tannins give way to a bouquet of delicious fruity flavors with sweet spices, complemented by empyreumatic nuances from long aging. The wine lingers on the palate, with a persistent and equally generous finish, enhanced by a hint of cinnamon and a few notes of zan. The power of this cuvée's 14.5% alcohol content is forgotten, as it is all tenderness and voluptuousness, without any heaviness, with beautiful volume and great juiciness. What's more, this remarkably balanced wine is extremely drinkable and has good aging potential. Ready to drink now, it paired beautifully after aeration with a traditional farmhouse rabbit stew, marinated and simmered for a long time, with garlic purée and pan-fried lepiota mushrooms. Rating = 4.1.
