This 2019 Pax is made up of 65% Grenache—chosen for its aging potential and richness—and 35% Syrah—chosen for its finesse and freshness. The silky tannins support a generous, smooth palate with notes of licorice, caramel, and prunes, leading to a spicy finish. It pairs perfectly with a pork tenderloin with pepper or pan-seared veal liver with raspberry vinegar.

About the wine:
An elegant nose with notes of strawberries and red currants; on the palate, it is juicy and fresh, blending stewed red berries with subtle spicy notes. A magnificent wine that is a true delight.

Medium-deep to deep ruby color. On the nose, ripe blackberry and blackcurrant fruit, dark notes, herbs, roots, vegetal aromas, and a hint of acidity. On the palate, the same ripe dark fruit, lovely ripe and juicy sweetness, excellent body, fine acidity, grip, herbaceous notes, and spices, with good balance. The finish still carries that sweet, ripe character. Really lovely. And that lovely sweetness is thanks to the Grenache. Score: 16.5/20

Review and comment by Mr. GILLES D. Published on August 6, 2023
Grenache and Syrah come together in an atypical, full-bodied Ventoux. The supple attack is lined with dense, melt-in-your-mouth body, while the caressing, enveloping tannins allow a rich array of savory, fruity flavors to shine through, along with gentle spices, complemented by smoky nuances resulting from extended aging. The wine lingers all the way to the finish, which is persistent and equally generous, enhanced by a hint of cinnamon and a few notes of anise. One forgets the power of this cuvée’s 14.5% alcohol content, as it is all tenderness and sensual pleasure, without any heaviness, offering beautiful body and great juiciness. Moreover, this remarkably balanced wine, which is incredibly easy to drink, has good aging potential. Ready to drink now, it paired admirably—after being allowed to breathe—with an old-fashioned farm-raised rabbit stew, marinated and simmered for a long time, served with garlic mashed potatoes and pan-seared lepiota mushrooms with parsley. Rating = 4.1.
