Slightly overripe grapes, destemmed before vatting. Natural alcoholic fermentation during maceration, then stopped by mutage: a sudden addition of alcohol that stops fermentation and preserves the natural sugars still present in the grapes. Maceration continues after mutage in order to gently extract all the interesting compounds thanks to the alcohol in the medium. Approximately 6 weeks.

About the estate:

Structured into a dozen plots covering as many hectares, this estate's spectacular vineyard is mainly planted on steep clay and schist slopes overlooking the Mediterranean. It is a property with a long tradition, but one that seems to have lost momentum in recent vintages.

Vincent Cantié is wholeheartedly committed to the demanding viticulture of the Côte Vermeille. He seeks to express, in both dry and fortified wines, the character of the grapes (primarily Grenache Noir) grown on clay and schist soils. The dry wines are now remarkably reliable and the Banyuls wines are consistently excellent.
