But there is no grassy harshness, no aggression, no astringency. Just power and fullness. Rosemary, wild mint, and lavender. Slightly different from the T-M style, but not by much. Its characteristic freshness, modesty, restraint, and elegance are very much present. It has the savory flavor of a beef bouillon cube or beef roast trimmings, and the fruit is dark, with an earthy, mushroom-soy umami note. But there is no grassy harshness, no aggression, no astringency. Just power and depth. Rosemary, wild mint, and lavender. And the finish is filled with dark red fruits that seem to have waited until the end to step out from the wings, bursting with life. Bring on the wild boar stew! (TC)
