Almost menthol-like, the wine offers a precise, mineral-driven palate with a taut structure, featuring notes of zan, stone fruits, white flowers, pear, and citrus. Perfect as an aperitif and with river fish (or cold hake), certain types of seafood (such as mussels marinière, rather than oysters or raw shellfish, where the iodine might overpower the wine). It also pairs beautifully with certain mild cheeses, such as Reblochon, goat cheeses that aren’t too aged, and a creamy Saint-Marcellin.
