Château du Cèdre
Château du Cèdre, located in southwestern France, is owned by Pascal and Jean-Marc Verhaeghe. The three plots of the Château du Cèdre vineyard consist of the two best soil types in the Cahors appellation. The largest plot, 12.5 hectares, facing southwest, is situated on a constantly shifting cone of limestone scree. The soil, a very stony clay-limestone mix, is called "Tran." It plays a very important role in regulating temperature and humidity, and the wines produced on this soil have very fine tannins and are particularly clean and long-lasting. The other two plots (5.5 and 7.5 hectares, facing due south) consist mainly of pebbles, mixed with reddish ferruginous sand on the surface and clay and silica deeper down. The wines from these plots are more powerful and higher in alcohol. With low yields and thriving in poor soils, Malbec is a grape variety that demands a great deal of work. Planted on the great terroirs of Quercy, it produces floral and fruity wines with aromas of violet, red fruits, black fruits, and blackberry, offering plenty of body and length. As for the Viognier from Château du Cèdre, it possesses all the qualities required by the terroir to produce a natural wine: it withstands high summer temperatures contrasted by cool nights.
