Hachette
"Pale to medium lemon-gold in color, Haut Coustet 2016 bursts from the glass with bold scents of green mango, guava and pineapple paste as well as touches of clover honey, peach blossom and jasmine. The palate is super-intense and richly fruity with a pleasantly fat texture and great freshness, long, toasty finish." (Wine Advocate 2019 - Robert Parker). Enjoy it all year round, whatever the circumstances, with or without any particular reason: as an aperitif with Serrano ham, as a starter with a warm goat's cheese salad or a sweet, fruity scallop carpaccio, as a main course with rabbit in Sauternes and honey, with blue cheeses, and with desserts.

About the wine:
A traditional Sauternes, its golden-yellow, slightly amber hue reveals the concentration of its bouquet. It combines aromas of quince, candied fruit and gingerbread (cloves). Despite its generosity and opulence, harmony is preserved on the palate, with exotic fruit flavors enhanced by toasty notes. Reserve this wine for the best cheeses, or enjoy it as a dessert in its own right.
About the domain :
For twenty-five years, Philippe Mercadier acquired his know-how at the helm of Ch. Suduiraut. This experience now benefits his three Sauternes crus, managed with the help of his two sons: Châteaux Haut Coustet, Pechon and Tuyttens.

About the domain :
Extract from the article Terre de Vins November 2021: Vignobles Mercadier, a Sauternes success storyThe Sauternes appellation is undergoing a major transformation, with the aim of offering more accessible, easily digestible wines without losing any of their wonderful aromatic complexity. A path that many winegrowers have taken with great success. At a time when some choose to diversify in order to present a range, Paul and Émilie Mercadier, owners of several châteaux, focus solely on Sauternes, out of conviction. All that remained was to convince and sell: and this is what the couple have done, not without some success. What's their recipe?

More mellow than sweet, certainly due to its freshness and delicate aromas of exotic fruit. Very well-balanced on the palate. All finesse and no heaviness.

An excellent Sauternes with fruit, depth and a very long finish. The sugar is not aggressive. Unbeatable value for money

Powerful, round and voluptuous, with flavors of apricot, citrus marmalade and melon. Good balance between acidity and residual sugar. Long finish with a touch of honey. A lovely Sauternes at an unbeatable price. Why not serve it regularly, for example with Roquefort puff pastry on a bed of watercress and walnut kernels.
