The controlled designation of origin Quincy is a historic name for the Val de Loire, which celebrated its 70th anniversary as an AOC in 2006. The decree granting Quincy wines their appellation label was promulgated on August 6, 1936, following a long process of selecting Sauvignon grapes within the vineyard. Quincy was thus the first AOC to be recognized in the Loire Valley.
The historic birthplace of Sauvignon, Quincy is characterized by its homogeneous terroir. Located mainly on the left bank of the Cher River upstream from Vierzon, the vineyard covers 270 hectares. The predominantly sandy and gravelly soils rest on clayey gravels located on the lacustrine limestones of Berry.
TheQuincy AOC only applies to dry white wines made from Sauvignon grapes. The Quincy wines are fine wines distinguished by their citrus aromas with hints of white flowers and pepper. How is Quincy white wine produced?
The Quincy wine is made from 100% Sauvignon Blanc grapes. In terms of terroir, it is important to note that the vines are planted on an ancient terrace in the Cher department. With light, gravelly, sandy soils, the vines warm up more easily.As for vinification, the grapes are pressed immediately upon arrival from the harvest. The process is carried out slowly to ensure extraction of the juice, which is cold settled. The clear juice is then fermented in temperature-controlled stainless steel vats. The alcoholic fermentation of the wine must be carefully monitored and the temperature must be between 18 and 22°C. At the end of fermentation, the wine is left on fine lees until spring arrives.
