The vines are planted on the poor gravel soils of the hilltops and on the south-facing slopes. Cabernet Sauvignon (60% of the vineyard) thrives here. On the eastern slopes and hillsides where the limestone bedrock of Saint-Estèphe outcrops, Merlot (40% of the vineyard) thrives.

Winemaking at Château Cos d'Estounel is tailored to the character of each harvest, prioritizing the expression of the Saint-Estèphe terroir. Aging takes place in new merrain oak barrels, which subtly enhance the wine’s aromas and flavors with just the right amount of oak.
