80% de-stemming, vatting in temperature-controlled stainless steel vats: cold prefermentary maceration (for 5 to 6 days), start of alcoholic fermentation with indigenous yeasts (28°C), light pumping-over for gentle extraction, maceration for about 3 weeks, gentle pressing, then malolactic fermentation.

About the domain :

The Yonne village of Saint-Bris is home to several Bersans. Founded in 2009 after a family split, Jean-Louis and Jean-Christophe's estate covers 22 ha in the communes of Chablis, Irancy and Saint-Bris, and is farmed organically (certified since 2012).

Light red wine, long on the palate, very Burgundy-like. Very good.
