This magnificent Irancy, produced from a 0.75-hectare plot of old vines, develops a great aromatic intensity with rich, fruity aromas and delicious hints of kirsch. Its supple and elegant palate is reminiscent of cherries in brandy and is perfectly structured, leading to a long, subtly salty and mouthwatering finish.

70% destemming, vatting in temperature-controlled stainless steel vats: cold pre-fermentation maceration for 5 to 6 days, alcoholic fermentation started using indigenous yeasts (28°C), gentle pumping over for gentle extraction, maceration for around 3 weeks, delicate pressing, then malolactic fermentation.

Aged for 12 months in 228-liter Burgundy barrels (used 1 to 5 times), with periodic stirring of the fine lees.

About the estate:

The village of Saint-Bris, in the Yonne department, is home to several Bersans. Founded in 2009 after a family split, Jean-Louis and Jean-Christophe's estate covers 22 hectares spread across the communes of Chablis, Irancy, and Saint-Bris, and is certified organic (since 2012).
