Nicolas Fèvre - Saint-Romain blanc 2023
2*Coup de Coeur
Hachette
“This Saint-Romain elevates Chardonnay in this surprising cuvée—a wonderful discovery!”
Expressive and complex, this white Saint-Romain from Domaine Nicolas Fèvre opens with enveloping aromas of vanilla bean, acacia blossom, and lemon zest, complemented by a refreshing hint of minerality. Full-bodied and velvety on the palate, this cuvée reveals itself as light and refined, with flavors of citrus zest, stone fruits, and vanilla brioche, leading to a lingering finish that is both full-bodied and supple. It pairs perfectly with pan-seared scallops or a beautiful sole meunière—absolutely magnificent.

About the wine:
Please note: there won't be enough of this very limited-release vintage to go around. And that's a real shame, because everything about it is remarkably harmonious. We love its elegant golden color with straw-colored highlights, its complex nose with subtle notes of vanilla, flowers, minerals, and citrus, and its full-bodied, fresh, and dynamic palate—lively and taut, yet with a hint of richness that rounds out the edges. Serve it with a fine fish dish, such as monkfish with saffron.
About the estate:
Although Nicolas Fèvre’s main profession is wine consulting, he established his own small estate in 2014 by taking over part of the family’s vineyards—previously leased out—in Saint-Romain, Auxey-Duresses, and Bourgogne-Aligoté.
